Beer Braised Beef Stew with Brussels Sprouts

With the cooler weather upon us, warm up with this Beer Braised Beef Stew with Brussels Sprouts courtesy of Whole Foods Market. This recipe can be paired and made with our Dragonhosen Imperial Oktoberfest.

Ingredients:

2 pounds beef stew meat, cut into 1-inch cubes

Sea salt and ground pepper

1/4 cup flour

6 tablespoons extra-virgin olive oil, divided

1 cup dark beer (Dragonhosen Imperial Oktoberfest)

1 cup chopped white onion

1 cup chopped celery

1 1/2 cup chopped carrots

2 tablespoons chopped garlic

2 cups beef broth

1 1/2 cup chopped white creamer potatoes (omit if serving over potatoes or noodles)

1 1/2 cup Brussels sprouts, halved or quartered if large

2 tablespoons finely chopped fresh thyme
