Shake Chocolate Porter Pudding with Porter Whipped Cream

We wanted to share this scrumptious made-from-scratch pudding recipe with you because, well, who doesn't love chocolate pudding?! All credit goes to our friend Jared Mills, whom we met at the Extreme Beerfest in Omaha earlier this year. Thanks for sharing, Jared! Treat yourself to some Shake Chocolate Porter Pudding today! 


For the Pudding:
·    2/3 cup sugar (Jared recommends raw sugar)
·    3 tablespoon cornstarch
·    4 ounces dark chocolate (60 percent), chopped
·    ¾ cup heavy cream
·    ¾ cup Shake Chocolate Porter
·    1 large egg yolk
·    1 tablespoon unsalted butter
·    ½ teaspoon vanilla extract
For the whipped cream:
·    1 cup heavy cream
·    ½ cup powdered sugar
·    3 tablespoons Shake Chocolate Porter
·    ½ teaspoon vanilla extract
1.    In a large saucepan off heat, whisk together the sugar and cornstarch. Add the cream, beer and egg yolk. Whisk until well combined. Add the chocolate.
2.    Bring to a boil, stirring continually over medium heat. Whisk continually for 1 minute, remove from heat.
3.    Add the butter and vanilla, stir until well combined.
4.    Pour into serving containers, chill until set, about 2 hours.
5.    To make the whipped cream, add the cream and powdered sugar to a stand mixer. Beat on high until soft peaks form. While mixer is running add the beer and vanilla, beat until soft peaks return.
6.    Top the pudding with the whipped cream prior to serving.
